The recipe goes as follows:
start by preheating your oven to 160 degrees Celsius and greasing a cake pan.
In a mixing bowl, combine the dry ingredients:
300g all-purpose flour
15g baking powder
100g Sugar
Hint of salt
Mix well with a swift or whisk.
In another bowl, mix the wet ingredients:
300ml full-fat coconut milk
125g room temperature butter
100ml sparkling water
1 tbsp apple cider vinegar
Slowly incorporate the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to over-mix.
Pour the batter into the prepared cake pan and place it in the preheated oven.
Bake the cake for approximately 50 minutes or until a toothpick inserted into the centre comes out clean.
Once the cake is done, remove it from the oven and allow it to cool in the pan for 15 minutes before transferring it to a cooling rack.
While the cake is still warm, brush it with a simple syrup to keep it moist.
To make the frosting mix the ingredients until smooth and creamy, for about 10 minutes.:
3 tbsp of passion fruit
100g of powdered sugar
250g of vegan mascarpone cheese
Once the cake has cooled completely, frost it with the passion fruit mascarpone frosting.
Decorate the cake as desired, and enjoy the freshest and most delicious vegan cake you've ever tasted!
