3 Layered Dark Chocolate Cherry Cake for Vegans

Cake butter Ingredients & Measurements
300g all-purpose flour
100g sugar
80g cocoa powder
13g baking powder
1/2 teaspoon salt
1 teaspoon Cinnamon
240 buttermilk
100ml vegetable oil
100ml sparkling water
1 teaspoon pure vanilla extract
Shot of freshly brewed hot coffee
Instructions:
Preheat your oven to 200°C and grease the 6-inch round cake pans.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, cinnamon, and salt.
Add the wet ingredients: butter milk, vegetable oil, sparkling water, shot of espresso and vanilla extract to the dry ingredients. Mix until well combined.
Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the centre of the cakes comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Cooking protocol
Pre-heat the oven at 200°C.
Bake the cake for 40/ 50 minutes at 170°C
Cooling down is essential!
Once the cake is cold, cut the desired layers with a cake leveller or dental floss (see how I did it on my YouTube channel)
Vegan Cherry Buttercream:
Ingredients:
150g Margarine
1 tablespoon Tart Cherry Juice
260g powdered Sugar
Instructions:
In a bowl, slowly combine the ingredients, whisk it all until nice and fluffy.
Assembly:
Place one cake layer on a serving plate, add simple syrup and spread a layer of the cherry buttercream
Repeat with the remaining layers, stacking them on top of each other.
Use the remaining buttercream to cover the top and sides of the cake.
Decorate with fresh cherries or shaved dark chocolate, or cacao powder, if desired.
